Make Quick “Ice Cream” with Only Frozen Bananas

Yes, you heard me, only bananas!

Creamy, soft-serve style ice cream with just one ingredient — and no ice cream maker needed!  No additional dairy, sweeteners, or ingredients needed whatsoever.

At first, the fruit may seem to resist the transformation, but persevere with your powered blades, and soon you’ll have a nice alternative to heavier frozen desserts. One-ingredient banana ice cream — it’s kind of magic, isn’t it? Have you ever tried it?

If you haven’t — well, it’s a holiday weekend, and what better time to try something new?  It’s an easy way to stay cool and use up over-ripe bananas.

I was surprised at this bit of kitchen wizardry; I assumed that a blended banana would be flaky or icy. But no — it makes creamy, rich ice cream with a smooth texture any home ice cream chef would love to have in their frozen treats.

Here, are step-by-step instructions for making super-creamy, super-easy ice cream from just one thing.

How to make 1-ingredient ice cream…

Here’s a step-by-step of how to do it. The major tips can be summed up as:

• Peel your bananas first, it’s not impossible to peel it afterwards, but it’s much more difficult and time-wasting, which I learned the hard way.

• Cut them into small pieces.

• Freeze for just 1-2 hours on a plate or in a baggie.

• Blend, blend, blend – scraping down the bowl when they stick.

• Enjoy the magic moment when they turn into ice cream!

I let my banana pieces sit in the food processor for about 30 minutes before blending…easier on the machine. Sometimes I add about a teaspoon of vanilla extract.

The ice cream will be the texture of soft-serve, but if you freeze again in an airtight container, it will get harder and more like regular ice cream.

If you have already tried banana ice cream, and would like to switch it up a bit, then here are four twists on the classic — just to sweeten the deal.

Peanut Butter & Honey Banana Ice Cream

makes 2 servings

1 1/2 peeled medium bananas, sliced into coins and frozen until solid, 3 tablespoons peanut butter, 2 teaspoons honey.

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in peanut butter and honey, and transfer to a freezer container and freeze until solid.

Dark Chocolate Banana Ice Cream

makes 2 servings

1 1/2 peeled medium bananas, sliced into coins and frozen until solid, 3 tablespoons unsweetened cocoa powder, 2 tablespoons cream, 1/2 teaspoon vanilla extract.

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in cocoa powder, cream, and vanilla. Transfer to a freezer container and freeze until solid.

Cinnamon Dulce Banana Ice Cream

makes 2 servings

1 1/2 peeled medium bananas, sliced into coins and frozen until solid. 3 tablespoons sweetened condensed milk. 1/2 teaspoon freshly-ground cinnamon.

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in sweetened condensed milk and cinnamon. Transfer to a freezer container and freeze until solid.

Strawberries & Cream Banana Ice Cream

makes 2 servings

1 1/2 peeled medium bananas, sliced into coins and frozen until solid. 1/3 cup roughly chopped frozen strawberries. 2 tablespoons cream.

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in strawberries and cream until smooth, and transfer to a freezer container and freeze until solid.

I hope I’ve inspired you to dig out your food processor for one last summer evening treat.  If you only have a blender rather than a food processor, it’s ok. The bananas are too solid to work in the blender without liquid. Use your blender and add a small container of almond milk to the 3 frozen bananas in your blender and you will end up with an incredible guilt-free shake!
